You can make it the night before and it is so moist!

• 225 g butter
• 225 g sugar
• 450 g plain white flour
• 3 eggs
• 1 small cup of milk
• 1 tsp of baking powder
• 1.5 kg mixed dried fruit
• 1 tsp golden syrup
• 1 tsp vanilla essence
• 3 tsp rum
• Round baking tray, baking paper

Turn oven on to 135 °C.
Line a large round or square tin with baking paper – preferably two layers.
Bring milk to boil; remove from stove. Add baking soda and then pour the milk mixture over chopped butter.
When melted add sugar and stir.
Add in eggs and mix well.
Add this mixture to the flour and fruit, add in rum, mix well and pour into cake tin.
Bake for 3.5 hours on 135 °C.
