Healthy Smashed Chickpeas

1 Can chic peas washed
Handful fresh basil chopped
5 Tablespoons Grated Parmesan Cheese
Juice of one Lemon
Rind of one Lemon grated
Handful toasted pine nuts
2 Tomatoes
1/2 small red onion
A good Drizzle of Olive Oil
Salt and Pepper

In a blender blend the Chic peas tomatoes and onion until chunky. Not smooth… Remove and mix in the rest of the ingredients. Will keep in the fridge for a few days.
