• 1 kumara, grated
• 2 carrots, grated
• 1 red onion, diced fine or grated
• 2 eggs
• 3 heaped tablespoons of flour or coconut flour
• 3 teaspoons cumin
• Dash of milk to combine if the mixture looks dry
• Rice bran oil
• Heat a pan with some rice bran oil.
• Mix all the ingredients and place small amounts of rice bran oil.
• Once all cooked, place a rocket leaf, a piece of feta and drizzle with some balsamic reduction.
• These can be made in advance and frozen.
