Spicy Plum Sauce

I hope you are enjoying your summer and taking advantage to the fact we live in an amazing place full of fruit and the  plums are going crazy!  Everywhere I look there seems to be ripe plums!  Our trees did well this year so I decided to make a bit batch of spicy plum sauce and plum jam.  Get the kids involved they love watching the transformation happen.  If you don’t have a plum tree I am sure your neighbour might offer to make them some Jam or Plum Sauce and I am sure they won’t mind sharing!  Plums are ideal to freeze for plum pie so there is no excuse to be wasting them…mind you I give most of mine away so now I have a permanent plum jam production happening in our house!

6 kegs pitted plums
3 large onions diced very small
3 cups brown sugar
3 garlic gloves crushed
3 teaspoons chilli flakes
3 teaspoons cinnamon
1 cup of malt vinegar
one good piece of grated fresh ginger
1 extra cup of brown sugar

Place all of the ingredients in a large pot apart from the extra cup of brown sugar and on low heat to simmer for 2 hours stirring consistency.  You will not need any water.  After two hours test a little spoonful and if you like it sweeter then add the extra cup of brown sugar.  Allow to cool and blend in a blender.  Place in jars this vinegar will help with the preserving of this sauce.
