300-350g of fresh Whitebait
3 eggs
3 heaped tablespoons of self-raising flour
1/2 teaspoon of baking soda
1 teaspoon of sea salt
1/2 teaspoon of cracked pepper
1 tablespoon of fresh parsley chopped fine
Rice Bran Oil
Drain the whitebait, in a large dish, whisk the eggs with the baking soda salt, and pepper. sift through the flour and mix through the parsley, then gently fold through the white bait.
In a large nonstick pan, heat 7 tablespoons of rice brain oil, and fry the whitebait so that it is golden on both sides.
Then drain on some paper towels to remove any access oil.
Service with a piece of white bread and butter, the good old kiwi way!
