Mamma Mia did someone say Pizza???

Pizza Dough and Mamma Rosa's Sugo di pomodoro

Ingredients:

  • Pizza Dough:

  • 2 cups all-purpose flour

  • 2 cups self-rising flour

  • 15g yeast (mixed with 1-1/2 cup lukewarm water and 1/2 teaspoon sugar)

  • 1 teaspoon salt

  • 1/4 cup oil (olive oil or vegetable oil)

  1. Activate the Yeast:

  • In a small bowl, combine the yeast, lukewarm water, and sugar. Let it sit for about 5-10 minutes until it becomes frothy.

  1. Prepare the Dry Ingredients:

  • In a large mixing bowl, combine the all-purpose flour, self-rising flour, and salt.

  1. Mix the Dough:

  • Make a well in the center of the flour mixture and pour in the activated yeast mixture and oil. Mix until a dough forms.

  1. Knead the Dough:

  • Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

  1. First Rise:

  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it has doubled in size.

  1. Preheat Oven:

  • Preheat your oven to the desired pizza-baking temperature (usually around 220oC.

  1. Roll Out the Dough:

  • Once the dough has risen, punch it down and roll it out to your desired thickness on a floured surface.

  1. Add Toppings:

  • Transfer the rolled-out dough to a pizza stone or baking sheet. Add your favourite pizza sauce, cheese, and toppings.

  1. Bake:

  • Bake in the preheated oven for 20-25 minutes or until the crust is golden and the cheese is melted and bubbly.

  1. Serve:

  • Allow the pizza to cool for a few minutes before slicing and serving.

  • 3 can crushed tomatoes.

  • 3 cloves garlic, crushed.

  • 3 tablespoon olive oil

  • 2 large onions diced fine.

  • 1 teaspoon dried oregano

  • Handful of fresh basil

  • Salt and pepper to taste

  1. Prepare the Sauce:

  • In a saucepan, heat olive oil over medium heat. Add garlic and onion sauté until fragrant.

  1. Add Tomatoes:

  • Pour in the crushed tomatoes and stir.

  1. Season:

  • Add dried oregano, basil, salt and pepper, and pepper to taste. Stir to combine.

  1. Simmer:

  • Allow the sauce to simmer for 15-20 minutes, stirring occasionally, until it thickens slightly.

  1. Adjust Seasoning:

  • Taste and adjust the seasoning as needed.

  1. Use as Pizza Sauce:

  • Let the sauce cool a bit before spreading it over your pizza dough as the base.
