Pizza Dough and Mamma Rosa's Sugo di pomodoro
Ingredients:
Pizza Dough:
2 cups all-purpose flour
2 cups self-rising flour
15g yeast (mixed with 1-1/2 cup lukewarm water and 1/2 teaspoon sugar)
1 teaspoon salt
1/4 cup oil (olive oil or vegetable oil)
Activate the Yeast:
In a small bowl, combine the yeast, lukewarm water, and sugar. Let it sit for about 5-10 minutes until it becomes frothy.
Prepare the Dry Ingredients:
In a large mixing bowl, combine the all-purpose flour, self-rising flour, and salt.
Mix the Dough:
Make a well in the center of the flour mixture and pour in the activated yeast mixture and oil. Mix until a dough forms.
Knead the Dough:
Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
First Rise:
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it has doubled in size.
Preheat Oven:
Preheat your oven to the desired pizza-baking temperature (usually around 220oC.
Roll Out the Dough:
Once the dough has risen, punch it down and roll it out to your desired thickness on a floured surface.
Add Toppings:
Transfer the rolled-out dough to a pizza stone or baking sheet. Add your favourite pizza sauce, cheese, and toppings.
Bake:
Bake in the preheated oven for 20-25 minutes or until the crust is golden and the cheese is melted and bubbly.
Serve:
Allow the pizza to cool for a few minutes before slicing and serving.
3 can crushed tomatoes.
3 cloves garlic, crushed.
3 tablespoon olive oil
2 large onions diced fine.
1 teaspoon dried oregano
Handful of fresh basil
Salt and pepper to taste
Prepare the Sauce:
In a saucepan, heat olive oil over medium heat. Add garlic and onion sauté until fragrant.
Add Tomatoes:
Pour in the crushed tomatoes and stir.
Season:
Add dried oregano, basil, salt and pepper, and pepper to taste. Stir to combine.
Simmer:
Allow the sauce to simmer for 15-20 minutes, stirring occasionally, until it thickens slightly.
Adjust Seasoning:
Taste and adjust the seasoning as needed.
Use as Pizza Sauce:
Let the sauce cool a bit before spreading it over your pizza dough as the base.
