Vodka and Mascarpone Salsa Rossa

One onion diced fine

3 rashes of bacon diced

1/4 cup of Vodka

1 Cans of Casa Rinaldi Cherry Tomatoes (You can find these on La Vita's New Online Store )

1/2 cup of Mascarpone cream or thickened cream

1 teaspoon of dried oregano

1 Packet of Fattorie Umbre Tagliatelle P&F Pasta 500gm (You can find this product on La Vita's )

Fresh Basil

Grated Parmesan cheese

In a large pot or pan, cook the onion with olive oil until soft, then add the bacon until golden. Pour over the vodka and stir until it has evaporated. Add the canned tomatoes and simmer on low for 10 minutes, stir through the Mascarpone or Cream until combined keeping the sauce on very low heat, season with some salt and pepper, and stir through the oregano and some fresh basil simmer for a few minutes and remove from the stove. Cook the pasta to the cooking instructions. Pour the sauce over the top and before serving sprinkle with some parmesan cheese.
