What is for Breakfast?

Start your day off right!

Breakfast is often considered the most important meal of the day, as it provides the energy and nutrients needed to start the day off right. However, many people skip breakfast due to time constraints and busy schedules. Fortunately, there are many quick and convenient breakfast recipes below, allowing you to enjoy a satisfying breakfast (or lunch) even on the busiest of mornings.

Salmon + Spinach Omelette

  • 3 eggs whisked.

  • 1 tablespoon of grated cheese

  • A handful of fresh spinach

  • 60g of Smoked Salmon

  • 1 Tablespoon of pesto

  • Salt and pepper

  • Spray Oil

Whisk the eggs with some salt and pepper, in a non-stick pan, and spray with some spray oil.

Place the egg into the pan allow to cook for a minute then and add the spinach on one side with some smoked salmon and cheese.

Allow the omelette to cook underneath, and then flip one side of the omelette over, with a non-stick spatula flick the omelette over and cook for a further 2 minutes on low.

Serve with a dollop of pesto!


Frozen Strawberry Smoothie

  • 10 Frozen Strawberries

  • 1 cup of oat milk

  • 1 teaspoon of honey

  • 1 teaspoon of chia seeds

  • 2 tablespoons of rolled oats.


Place all the ingredients into a blender and give it a good blitz!

Go Bananas Smoothie

I like to peel and cut bananas and place them in the freezer for my smoothies!

  • 1 banana

  • A handful of frozen berries

  • 1 tablespoon of rolled oats.

  • 1 cup of cranberry juice

  • 2 tablespoons of unsweetened yogurt

  • 1 teaspoon of honey

  • 1 teaspoon of chia seeds

Place all the ingredients into a blender and give it a good blitz!

Homemade Muesli

  • 3 cups rolled oats.

  • 1 cup wheat bran

  • 1 cup of coconut flakes

  • 1 teaspoon ground cinnamon

  • 1 cup sliced almonds.

  • 1 cup of hazelnuts

  • ½ cup of pumpkin seeds, 3 tablespoons of linseeds

  • ½ cup of chopped dried apricots or ½ cup of dried cranberries

  • 3 tablespoons of runny honey this is optional.


Preheat the oven to 170oC.


Mix the rolled oats wheat bran and coconut with cinnamon, and toast in the oven for approx. 8-10 minutes or until it’s toasted.

Drizzle the runny honey over the top before toasting this is optional.

In a non-stick pan, spray with a little spray oil, and lightly toast the seeds and nuts, then once you have removed the rolled oats mixture add the toasted nuts and dried fruit.


Place in an airtight container.

Muesli Bars

Turning your Muesli into Muesli bars!


Super easy, use all the ingredients listed in the Muesli and follow the toasting method.

Prepare a lined tin.

In a small pot over medium heat, place the peanut butter honey or coconut oil or you can use butter.

Once melted mix it through the toasted Muesli.

Press the mixture once combined down into the lined tin and pour over some melted chocolate this is also optional.

Set this in the fridge for 45 minutes, then remove it from the fridge and make some small cuts with a knife this will make it easier to remove once fully set.

Then place the tray back into the fridge for a further 3 hours.


· 1/2 cup peanut butter

· 1/4 cup honey

· ½ cup melted coconut oil or substitute butter

· 100 grams of dark chocolate

Chia Seed Yoghurt Bowls (or jars)

  • 6-8 small ramekins

  • 3 cups of plain unsweetened yogurt

  • 1/2 cup of chia seeds

  • 1 cup of Frozen berries

  • ½ cup of sheered coconut toasted in a non-stick pan

  • 70g of toasted almonds, toast these in a non-stick pan and set aside.

  • Sugar-free free maple syrup


Mix all the ingredients together apart from the maple syrup and almonds, and keep a few berries for decoration.

Place the Chia Seed mixture into mini ramekins, and place small amounts of toasted almonds on top with a few blueberries.

Before serving pour a few tablespoons of sugar-free maple syrup on top.

Banana Loaf, yes please!

  • 3 bananas

  • 140g butter

  • 1 teaspoon of baking soda

  • Sprinkle of salt

  • 150g brown sugar

  • 3 large eggs were beaten.

  • 2 teaspoons of vanilla extract

  • 3 cups of all-purpose flour

  • 3 tablespoons of golden syrup

  • 70 grams of walnuts chopped.


Walnut and brown sugar icing

Mix 2 cups of icing sugar with 3 tablespoons of water.

Its ok if the icing is a bit runny, I like it when it runs over the edges of the loaf.

Using half of the walnuts in the above ingredients list

3 tablespoons of brown sugar



Preheat oven to 175oC.

Line a loaf tin.

Mash the banana.

Then mix all the ingredients and use only half of the chopped walnuts, the remaining walnuts will be used for the icing, Pour the mixture into a lined loaf tin and bake for 40-45 minutes until golden or cooked through the middle...

Once the loaf has cooled, pour over the icing, and sprinkle the walnuts and brown sugar.

This loaf is a great alternative to bread, and can be toasted in the toaster, and served with a nice cup of tea!
