A Little Home Cooking with La Vita! Well, this was actually easier than I thought! Honestly, once you've prepped the chicken, the rest is a breeze. And who doesn't love a good homemade meal that's simple, delicious and doesn't cost a fortune?

First up, my crispy potato skins! Here's a little trick I love. Whenever I'm peeling potatoes, I keep the skins rather than throwing them away. I give them a good wash, pat them dry and pop them into the freezer for another day. No waste in my kitchen!

When I'm ready to cook them, I simply pop them into the air fryer for about five minutes to defrost. Then I crank up the heat, give them a spray of olive oil, sprinkle over some paprika and salt, and cook until they're beautifully golden and crispy.

Once they're ready, I top them with a generous dollop of sour cream, a drizzle of sweet chilli sauce and some freshly chopped spring onions. Trust me, these are seriously good! Now for the chicken! Nothing complicated here. I simply crumb my chicken. You can use a buttermilk coating with breadcrumbs if you prefer, or just your favourite seasoned breadcrumbs. I place the chicken on a rack over an oven tray so the heat circulates around it, giving it that lovely crispy coating without having to deep-fry it. Into the oven it goes until golden and cooked right through.

And of course, a lovely fresh salad!

We all know that when it comes to salads, anything goes!

For mine, I chopped up some fresh lettuce, added finely sliced red onion, spring onions and some beautiful ripe avocado with a squeeze of fresh lemon juice. You could also throw in some cherry tomatoes, cucumber, grated carrot, fresh herbs or even a little crumbled feta if you fancy!

A drizzle of olive oil, a little cracked pepper and you're good to go. And there you have it!

Crispy homemade chicken, golden potato skins loaded with all the good stuff and a fresh, colourful salad. Nothing fancy, nothing difficult, just good old-fashioned home cooking with a few little twists.

And the best part? Those potato skins that might have ended up in the rubbish or in our case the compost have turned into something absolutely delicious! Sometimes the simplest meals really are the best.

Buon appetito from my kitchen to yours!
