Virginia's Crispy Kūmara Salad

You'll need:

1 kūmara, peeled into thin ribbons using a vegetable peeler

A handful of fresh rocket

½ small red onion, thinly sliced

100g feta, crumbled

A handful of walnuts

1 tablespoon honey

Balsamic glaze

One orange finely sliced and the juice of an orange

Pepper and you are away!


Method:

Peel the kūmara into long ribbons using a vegetable peeler.

Fry in hot oil until beautifully golden and crispy. Drain well on paper towels and season with a little salt while still warm.

Toast the walnuts in a pan, then drizzle over the honey and stir until lightly caramelised.

Arrange the rocket on a serving platter.

Top with the red onion, crumbled feta, honey walnuts and plenty of crispy kūmara sliced orange.

Finish with a drizzle of balsamic glaze

My tip: The crispier the kūmara, the better! That's what makes this salad so delicious.
