🇮🇹 POLLO ALLA TOSCANA TUSCAN CHICKEN 🇮🇹

You’ll need:

6–8 boneless chicken thighs

Olive oil

Salt & cracked black pepper

1 onion, sliced

3-4 cloves garlic, crushed

1 capsicum, sliced

A good handful of cherry tomatoes or whatever tomatoes you have!

A good splash of dry white wine

300ml cream

A generous handful of freshly grated Parmesan

A little fresh or dried thyme




How I make it:


First, season the chicken thighs with salt and pepper and brown them in a little olive oil. I use thighs because I like that little bit of fat and fat equals flavour!

In a separate pan, sauté the onion, garlic, capsicum and tomatoes until they start to soften.

Then add a good splash of dry white wine…


 And naturally, a glass for the chef! This is an essential ingredient. 


Let the wine cook down a little, then add everything to the chicken.

Pour in the cream, add a good amount of Parmesan, a little thyme, salt and pepper, then let it gently simmer until the chicken is cooked and the sauce is creamy and delicious.

Taste as you go. Add more Parmesan if you feel like it  I certainly do!

Serve with potatoes, pasta, crusty bread or a nice salad to mop up all that gorgeous sauce.

No fancy rules, no perfect measurements just good food, a bit of vino and plenty of flavour.
