Quick Prawn & Fresh Noodle Stir Fry

Ingredients
300g prawns, peeled
1 packet fresh noodles
1 onion, sliced
1 red capsicum, sliced
3 spring onions, sliced
1 teaspoon grated fresh ginger (optional)
1 tablespoon peanut butter
2 tablespoons soy sauce
Juice of ½ a lemon
1 teaspoon sweet chilli sauce or honey (optional)
1 tabelpsoon of Miso Paste if you have it (optional)
1 tablespoon sesame oil or olive oil
Handful of frozen mixed veges
A handful of fresh parsley, roughly chopped
Freshly cracked black pepper
Toasted sesame seeds or crushed peanuts to serve (optional)
Method
Heat the oil in a large frying pan or wok. Cook the onion and capsicum for 3 to 4 minutes until they begin to soften, add the frozen mixed veges.
Add the spring onions, ginger (if using) and the prawns. Cook for another 2 to 3 minutes until the prawns turn pink.
In a small bowl, mix together the peanut butter, miso paste, soy sauce, lemon juice and sweet chilli sauce with a splash of warm water until smooth.
Add the fresh noodles to the pan, pour over the sauce and toss everything together until the noodles are coated and heated through.
Finish with the fresh parsley, a good crack of black pepper and, if you like, a sprinkle of toasted sesame seeds or crushed peanuts.
Dinner on the table in about 15 minutes. Perfect for those busy nights when you need something quick, tasty and full of flavour!
